Guys, today is exciting for two reasons. 1. Carrie from Dream Green DIY is here with an awesome new recipe post. 2. She made a salad that I would actually eat. If you’re new to making meals for yourself, this recipe is easy as it gets. Really, what’s easier than tossing lettuce in a bowl? Probably nothing. Of course there are other tasty (and easy to add) ingredients involved, but I’ll leave it to Carrie to give you the specifics– take it away girl!
I, Carrie, am kind of fanatic when it comes to summer salads. There’s just something so blissful about fresh local produce combined with a sweet salad dressing on a hot day. My latest in a long line of favorite seasonal salad recipes is this Mandarin Orange Poppyseed Salad. It pairs sweet flavors (oranges and poppyseed dressing) with savory, nutty ones (mixed greens and feta cheese) for a salad that feels indulgent rather than health-conscious. Try topping it with chopped walnuts for extra flavor!
INGREDIENTS:

2 cups mixed spring greens or spinach

1/4 cup whole mandarin oranges

1-2 tablespoons poppyseed dressing

1/4 cup crumbled feta cheese
-
1/4 chopped walnuts, optional (but encouraged!)
DIRECTIONS:
Add the spring greens or spinach to a bowl, and top with mandarin oranges and feta cheese. Spoon on the dressing, and serve immediately.
